Dim sum, China’s most famous culinary exports, truly flourished in Hong Kong and has become an art form. Until a few decades ago, it served as breakfast for locals, with manual labourers opting for affordable cha lau (tea house) at dawn, enjoying tea, dim, and steamed rice with meat. Meanwhile, businessmen frequented more upscale establishments later in the morning for business discussions.
